Easy Rice and Lentils Recipe: High-Protein Vegetarian Meal Guide

- 1 cup (200g) green or brown lentils, rinsed
- 1 cup (200g) basmati or long-grain rice, rinsed
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon salt (or to taste)
- 2 cups (480ml) vegetable broth or water
This rice and lentils recipe (Mujadara) is hearty, healthy, and easy. It uses basic ingredients and takes about 40 minutes total.
Step 1: Rinse Lentils and Rice
Rinse lentils and rice separately under cold water until water runs clear. Use a fine-mesh sieve to prevent loss.
Step 2: Sauté Aromatics
Heat olive oil in a large pot over medium heat. Add onion and sauté 5-7 minutes until translucent. Add garlic, cumin, coriander, and salt. Stir constantly for 1 minute until fragrant.
Step 3: Cook Rice and Lentils
Add rinsed lentils and rice to the pot. Stir to coat with spices. Pour in broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until liquid is absorbed and grains are tender.
Step 4: Rest and Fluff
Remove pot from heat, keep covered, and let rest for 5-10 minutes. Fluff with a fork before serving.
