How to make semolina and coconut cake

This is a nice spongy cake made from semolina, coconut and yogurt

Difficulty level: Beginners

Instructions:

Ingredients:
1 ¼ cup sugar
4 eggs
1 tablespoon vanilla
1 teaspoon grated lemon peel
¾ cup oil
¾ cup plain yogurt
½ cup flour
1 tablespoon baking powder
1 cup semolina
1 cup coconut
Sauce:
½ cup sugar
1/4 cup water
A few drops of lemon juice

Preheat the oven to 350 degrees F

Beat in mixer the 1 ¼ cup sugar, 4 eggs, 1 tablespoon vanilla and teaspoon lemon peel

Mix in the ¾ cups oil

Mix in the yogurt

Add the ½ cup flour, baking powder, semolina and coconut and mix only until smooth

Pour the batter into a tube pan.
Bake 50-60 mins in a 350 degree F .
It should be light brown, pull from the sides of the pan and a toothpick comes out clean when inserted

The moment you take the cake out of the oven,
boil the ½ cup sugar, ¼ cup water and few drops of lemon juice until completely dissolved and it thickens just a little

While the cake is still hot from the oven and still in the baking pan pour the liquid over the top

Let the cake cool in the pan

... and your semolina coconut cake is ready
