Step 1: Prepare Chickpeas
Rinse canned chickpeas under cold water and drain. For extra smoothness, optionally remove the skins by pinching each chickpea.
Step 2: Blend Tahini Base
In a food processor, combine tahini, lemon juice, and garlic. Process for 1-2 minutes until pale and creamy. The mixture may thicken; that's normal.
Step 3: Add Chickpeas and Seasonings
Add drained chickpeas, salt, and cumin. Process, scraping down sides as needed. Slowly drizzle in 2 tablespoons of ice water while running.
