How to make a tasty casserole with left overs
If you want to make something tasty from leftovers this recipe is for you. This casserole can be eaten right away, frozen for times when you are not in the mood or too busy to cook or need something ready for the kids

Ingredients:
1 medium onion chopped
1 large potato cut into small pieces
Any cooked meat, chicken or turkey or uncooked chicken or turkey cut into small pieces
6 eggs
4 tablespoons of instant beef soup, other soup flavors may be used
1 teaspoon salt, 1/4 teaspoon pepper
4 cups of fresh breadcrumbs made from leftover bread or 2 – 3 cups of dry store bought crumbs
1 can of drained corn, 1/2 cup spinach or any leftover vegetables you may have
Oil and Large baking dish

Sauté the onion in 2 tablespoons oil for about 2 min.
Add any uncooked chicken or turkey you might be using and stirfry until the pieces turn white

Add the potatoes and stirfry for 2 min
Add any leftover cooked meat
Remove from the flame mix well
Let it cool for a few minutes

Mix in the eggs, instant soup, salt and pepper and corn or vegetables

Mix in the breadcrumbs
Add more if it seems too wet

Put the mixture into a greased baking dish and flatten with the back of a spoon
*optional – pour a tablespoon of oil over the top and spread it around with the back of a spoon
Sprinkle breadcrumbs over the top and press them down lightly

Bake in 350 degree fahrenheit oven 50 min or until lightly browned on top
